Comparing Ethanol and Water Solvents: When to Use Each One

Ethanol and water are the two most common solvents used in the chemical industry and laboratories. Each has its own characteristics in structure, solubility, and volatility. These factors directly affect reaction efficiency and extraction performance. Water stands out for its safety, stability, and high biocompatibility. Ethanol, on the other hand, is preferred for its flexibility, excellent solubility, and quick evaporation. Understanding the differences between the two helps in choosing the most suitable solvent for each specific application.

BASIC PROPERTIES OF ETHANOL AND WATER

Water (H₂O) is a highly polar solvent with a dense hydrogen bond network that allows it to dissolve ionic compounds efficiently. Ethanol (C₂H₅OH) has moderate polarity, containing a polar –OH group and a nonpolar C₂H₅ chain, enabling it to dissolve both polar and organic compounds. In industrial applications, ethanol is more versatile, suitable for processes requiring quick-drying solvents, while water is preferred for electrolytic reactions and stable biological systems.

SOLUBILITY AND MECHANISM OF ACTION

Water is the standard solvent in inorganic chemistry due to its high dielectric constant, about 80 at 25 °C. With a strong ability to form hydrogen bonds, water dissolves salts, acids, bases, and many compounds containing –OH, –COOH, or –NH₂ groups. The aqueous environment facilitates acid–base and redox reactions efficiently.

Ethanol has a lower dielectric constant, around 24.5, but offers more flexibility. Its dual polar–nonpolar structure allows ethanol to dissolve organic compounds such as esters, phenols, essential oils, alkaloids, and light oils. As a result, ethanol solvents is widely used in herbal extraction, paint manufacturing, cosmetics, and antiseptic solutions.

HOW TO CHOOSE THE RIGHT SOLVENT

When to choose water

Water is the standard solvent for inorganic reactions, acid-based processes, and hydrolysis. Its strong polarity enhances ionization and accelerates reaction rates. In medical applications, purified or distilled water is used to prepare injectable, infusion, and culture solutions. In the food industry, water dissolves sugar, salt, and natural enzymes, providing a stable environment for mixing and processing. However, for poorly soluble organic compounds, water is often combined with ethanol to achieve optimal results.

When to choose ethanol

Ethanol is more versatile as it dissolves in both water and organic compounds. In herbal extraction, 70–95% ethanol is commonly used to recover active ingredients such as flavonoids, alkaloids, and essential oils. When diluted with water, ethanol’s polarity can be adjusted, allowing simultaneous extraction of multiple compound groups.

Ethanol is also an ideal solvent for selective organic reactions. It offers flexible solubility and can be easily separated from the final product, improving purity and reducing purification costs. Moreover, ethanol is renewable and biodegradable, making it a green and environmentally friendly solvent.
